Not having been able to taste the cuisine of the chefs and pastry chefs invited to the Taste of Paris, due to an organization that still failed despite seven editions at the counter, it was possible, during this festival dedicated to the F&B sector from the 14th to the 17th of May, to ( re)discover different producers. “We found exhibitors who were unable to come in 2021 due to travel restrictions. Plant-based, meat-based and ready-to-drink beverage alternatives are emerging categories.”notes Yuki Sepheriades, commercial director.

Among them, Maison Mixicole. This start-up dedicated to ready-to-drink cocktails, which took its first steps at the Wine Paris fair last February, led by Ugo Jobin (Ugo & Spirits) and Emilie Amrani (Labtenders) wants its customers to find the taste of classic cocktails, how “taken from the shaker”, not to mention alcohol brands. Cosmopolitan (46.5%), under the brand The Fetichist, reserved for classic recipes, surprisingly presents notes of sour cherry when tasting. “In our cocktails, we wanted to touch the lemon side”, says Ugo Jobin. The Daiquiri (white rum, lime, sugar; 17.9%) is very sweet. It must be supplemented with sparkling water. The Moscow Mule (17.9%), based on vodka, lemon and ginger, is suitable for summer consumption on the terrace.

A physiognomist for the Bus Palladium, a famous Parisian club, Elvis represents Fils de Pomme.

Cider start-up Fils de Pomme, meanwhile, launched its first vintage cuvée in 2021 (Prestige), with a 7.5% graduation. Designed in collaboration with several chefs (Kévin de Porre, Erwan Ledru, Victor Mercier, Adeline Grattard, Guillaume Gomez), it is made with 14 varieties of apples. Notes close to those of Calvados can be detected in the mouth. A very assertive cider.

Beehive Bubbles - Taste of Paris 2022

Bulles de Ruche, which offered its first drinks in 2020, continues to develop its range. Based in Lille (Nord) and Paris, it has mead, a honey alcohol. 400 points of sale in France reference their products. Restaurants and cocktail bars are private customers. Tangy, close to a perry, Lychee Flowers (4.5%) is an extra-raw mead. Spring honey is used as a base for Fleurs de la baie du Mont Saint-Michel, which has just been marketed. White flower notes punctuate the lighter product.

Sauces for Pasta Sauce

Since March 2020, Papa Sauce, co-founded by Johanna Zaoui, born from digital technology, is a pasta sauce brand with an emphasis on Made in France, in Eure-et-Loir. Monoprix and, in Ile-de-France, Franprix and Carrefour offer some references (six products, including two organic). The best-selling Summer Mushroom and Truffle Sauce sticks well to the gnocchi without runny. “The offer is often the same from one brand to another; We wanted to renew the recipe offer”says the start-up team.

Mé-Mé Drinks - Taste of Paris

In Pringy (Haute Savoie), Mé-Mé drinks have been on the counter for five years. Green tea, matcha and sap are infused to create three recipes (Energizing, Moisturizing and Refreshing). The first is very close to green tea; the second spicier thanks to the lemon juice and the third to the spirit of cold tea thanks to the addition of chlorophyll and grape must. Gummies have since enriched the offer.

Romain Lenfant (Bootleggers) - Gray Goose - Taste of Paris 2022

The Bootleggers team (here Romain Lenfant) in collaboration with chefs to create gastronomic combinations.

On the menu of this edition of the Taste of Paris, the drinks were also honored through the French vodka Gray Goose (Bacardi-Martini). Four cocktail recipes were created under the guidance of chefs Thibault Sombardier and Mathias Marc. Le Chant de l’oie, a fresh and creamy cocktail (vodka, St-Germain liqueur, fresh lemon juice, beetroot juice, sugar syrup, ginger beer) paired well with a small beetroot cannelloni (fresh goat cheese , cherry, hibiscus, tarragon ), decidedly springy.

Don Papa - Rum (Dugas)

Ditto for Don Papa. The iconic brand of rum distributed by Dugas was discovered in a cocktail (Don Papa Masskara; calamansi juice, a Philippine citrus fruit; sugar syrup, calamansi bitters) accompanied by a bite of ensaimada (sweet fermented dough, in the spirit of a milk bread) accompanied by cheese, pork sausage, pepper/kalamansi ketchup and daiquiri mustard.

Gallia Beer - New Western - Taste of Paris 2022

Now in the heart of the Heineken group, the Gallia brewery, currently on display through an extensive advertising campaign, has highlighted its “life” based on Carignan grapes, and very potent barley and wheat malts (7.3%), with pleasant sweetness. West Coast IPA, very resinous, was renamed New Western (5.8%).
